Baked potatoes with lots of healthy toppings


Baked potatoes make an easy and versatile family meal. Sweet potatoes make a great alternative to regular potatoes, they are high in fibre, vitamins and minerals and taste delicious and sweet when baked. You cook them in the same way as regular potatoes, but if they are large, they may need to be cooked for longer.

Serves 6

6 large potatoes or medium sweet potatoes – bake in a moderate to hot oven (185 C) for 1 hour. If the potatoes are very large, they may need longer. Cut a slit into the potato skin with a sharp knife before cooking.

On a serving platter or in small bowls prepare a selection of the following toppings:

Sour cream

Salsa

Grated carrot

Grated zucchini

Grated beetroot

Celery – finely chopped

Baby spinach

Spring onions – chopped

Radish – chopped

Sauerkraut

Corn

Tuna

Baked beans

Serve family style and allow everyone to choose their own topping. Encourage kids to try something new each time.
